Nutty Granola

2 cups rolled oats

1 cup coconut chips

1 cup almonds

1 cup cashews

⅓ cup olive oil

¼ cup maple syrup

½ tsp salt

Preheat oven to 325°F. Mix ingredients and spread onto lined or greased baking sheet. Bake for 15 minutes, stir, and then bake for another 20 minutes. Let cool and store in an airtight container. When ready to serve, add your favorite fresh or dried fruit.
