Jicama Slaw Salad

2 cups jicama, peeled

1½ cups red cabbage

½ cup carrots


¼ cup mayonnaise 

1 tsp apple cider vinegar

2 tsp maple syrup

Salt and pepper to taste

Julienne or shred vegetables and prepare dressing separately, then combine.

Serves: 4
